Gourmet Gilligan's Featured Recipe

Gilligan was an all-around expert eater, especially
when it came to Mary Ann's coconut cream pies.
A love of good eating is why Bob and Dreama have
decided to share some of their favorite recipes

A great sandwich when you're looking for something a
little different, but easy and quick. Bob and I have these
sandwiches fairly regularly and often use ham rather than turkey. I got the recipe from a Land o' Lakes cookbook and while I'll admit it's not a dieter's dream, it SURE is tasty!
Dreama

Open-face Turkey & Broccoli Sandwich

1/2 Cup butter or margarine, softened
1/2 tsp. tarragon leaves
4 sandwich rolls, split
1 lb. deli-style turkey or ham
3/4 Cup mayonnaise
3/4 tsp. tarragon
2 cups broccoli flowerets
1 med. sliced 1/4" red onion, separated into rings
Monterey Jack cheese

Heat broiler. In small bowl, stir together butter and 1/2 tsp. tarragon; spread on cut bread. Divide turkey (or ham) among the slices of bread. In small bowl stir together mayonnaise and 3/4 tsp. tarragon; spread over turkey (or ham), top
with broccoli and onion rings. Place sandwiches on cookie sheet. Broil 3-4" from broiler for 3 to 5 minutes or until heated through. Top with cheese; broil 2 or 3 minutes
or until cheese is melted.
